When I started cooking keto, chicken stir fry with rice was one of the meals I missed the most. Thanks to some help from my friend and professional chef, Nick, we created this simple and delicious recipe you can make in less than 10 minutes.

Ingredients
This recipe only required 10 simple ingredients. I like that all of these ingredients are real and healthy foods.
- 1lb chicken breast
- 1/2lb frozen riced cauliflower
- ½ cup broccoli
- ¼ cup butter (or ghee)
- ¼ cup green onions
- 3 tablespoons coconut aminos
- 1 tablespoon olive oil
- Salt and pepper to taste
- Pinch of red pepper flakes (optional)
- Turmeric (optional)
Directions
Keto Chicken Stir Fry
1. Chop green onions and set aside.
2. Cut up chicken breast into small pieces, season with salt and pepper, and set aside.
3. Boil broccoli in water until tender or defrost frozen broccoli in the microwave for 1-2 minutes.
4. Heat the olive oil on medium heat in a large skillet
5. Add chicken, broccoli, and green onions, stirring occasionally until the chicken is done (165 degrees).
6. Stir in coconut aminos and red pepper flakes (optional).
7. Remove from heat and spoon over cauliflower rice.
Cauliflower rice
1. Bring 4 quarts of water to a boil, then add frozen cauliflower.
2. Cook for 10 minutes, uncovered, then strain. Return the cauliflower to the pot.
3. Melt butter and add to the cauliflower. Using a potato masher, mash the cauliflower until it turns into a rice-like consistency.
4. Serve as the base for keto chicken stir fry or other keto chicken breast recipes.

This easy keto chicken stir fry recipe is delicious on its own. As an added bonus, here some additional expert tips to make it even more keto amazing!
#1 Hidden Carbs – Coconut Aminos
I love coconut aminos as healthy alternative to soy sauce, but most brands of coconut aminos have a signfiicant amount added sugar.
The most popular brand on Amazon has 6 grams of added sugar per serving! This could absolutely set back your progress on the keto journey.
Personally, I use Coconut Secrets brand coconut aminos because they have only 1 gram of carbs per serving and no added sugar.

#2 Keto Chicken Breast vs Chicken Thighs
Another way to take this recipe to another level is to use chicken thighs instead of chicken breasts. The thighs have more fat in them so they taste more tender than chicken breast and great for the keto lifestyle.
As an additional bonus chicken thighs are cheaper to buy at the grocery store and taste better when you reheat them as leftovers.
#3 Conventional vs Organic Chicken
Most conventional chickens are grown mostly on factory farms in cramped quarters and genetically altered to twice as fast as regular chickens. Also, they are fed low-quality feed and antibiotics are frequently used to keep these chickens from getting sick. This definitely has a negative impact on the meat.
Is free-range, all-natural, or cage-free better? Unfortunately, chicken with these labels probably isn’t any better because the USDA doesn’t have any written standards for these labels. This allows bad actors to undersell family farms by applying these labels to poor quality meat.
What about organic? Yes, organic is a much healthy chicken breast because the chickens are raised in better conditions with less antibiotic use and higher quality feed. If you can afford it, I recommend organic chicken breasts or thighs for a healthy keto lifestyle.
#4 Conventional vs Organic Broccoli & Cauliflower
Should the broccoli and cauliflower be organic too? Nope, this is one the areas where you can save some money by buying non-organic vegetables.
Both broccoli and cauliflower are a part of EWG’s clean 15. This means they have very few traces of pesticides.
#5 Prep Your Frozen Veggies in the Microwave
I like to use the microwave to cook the broccoli and cauliflower before I start the keto chicken stir fry instead of boiling water. It’s much faster and requires fewer dishes.
#6 Frozen Cauliflower Rice
Now you can buy riced cauliflower Instead of making your own which is a big time saver. My favorite is Trader Joe’s cauliflower rice.
#7 Add Turmeric
Turmeric has been popular in Indian cuisine for thousands of years and recently recognized as a superfood for its ability to reduce inflammation in the body.
New research indicates that turmeric may have more health benefits when it is heated up.
Turmeric is another great keto item that you can find at Trader Joe’s. At $1.99 a jar, it’s very affordable and lasts a long time.
#8 Make a double-batch for leftovers
I’m a big fan of planned overs.
When I make this recipe, I always make a double batch because it’s so easy to make and makes great leftovers for lunch at work or for the nights where you’re just too tired to cook.
#9 Freeze your green onions
I love green onions because they add a great pop of flavor to keto chicken breast recipes, keto eggs, and much more.
The problem is normally they only last a few days in the fridge and it’s hard to use the whole bunch before they go bad.
A great solution is to buy a few bunches, cut them all at the same time, and freeze them in a ziplock bag. This way they will last for a month or two.
Keto Ninja Tip: You can also freeze avocados so they don’t go bad. They also last a month or two in the fridge instead of a couple of days on your kitchen counter.
